If a patient presents with peritonitis, but within hours of presentation is subsequently found to have a ruptured bowel secondary to acute diverticulitis – should this still count towards a unit's peritonitis episodes?

Yes in my opinion it counts as a peritonitis episode (multiple organisms with a mix of BGN, gram positive Cocci, anaerobes) ;
Very often, the perforation is really microscopic
